Roast Monkfish

Trying something new this year and swapping the turkey for fish? We recommend our chef's simple Roast Monkfish recipe with a a Lobster Bisque Gravy - it's a real crowd-pleaser everyone will enjoy.

Ingredients

To serve 4 people, we suggest 1-2kg monkfish tail on the bone 

  • 100g butter, melted 
  • Seasoning – salt and pepper 
  • 65ml lobster bisque gravy


Instructions

  1. Pre-heat the oven to 200 degrees
  2. Prepare the monkfish tail by removing the skin and then trimming off the fins
  3. Season the monkfish tail liberally with salt and pepper
  4. Coat the monkfish with melted butter
  5. Roast in the pre-heated oven for 20 minutes and baste with butter at regular intervals
  6. During the last five minutes, baste with the Lobster Bisque Gravy to give it a beautiful golden shine
  7. Remove from the oven and leave to rest, allowing the monkfish to collect the juices
  8. Add the collected juices back into the Lobster Bisque Gravy, ready for serving
